Do your kids eat squash?

Well mine does! bllech!!! She picked it out herself at the grocery store the other night. She said she loves it and ate it in China all the time. So, unlike all the other "I want"s and "I love"s, I bought squash....... for the first time ever! What mom in her right mind would say no to veggies? I then had to come home and google "how to cook squash". LOL Like I said, I've never bought it before, never cooked it before and neither her Daddy nor I choose to eat it. I sliced it up and sauteed it in a little olive oil with some onions (thanks to Google) and she ate ALL of it! Her only suggestion for 'next time' is for more onions! LOL She also loves cauliflower and green beans (although only fresh or frozen, not canned). And sweet potatoes! Another bllech!!! She eats tomatoes like candy so I send them in her lunch most days. Then last week while watching Survivor China, they showed a local family cooking for the cast, and Mailia suddenly says, "Ummmmmmmmmm tomatoes and eggs". I said "cooked together?!?!?" and she says that yes, they are cooked together, but not like American eggs, only Chinese eggs. Anybody know of a good Chinese recipe for tomatoes and eggs?!?!?!?!? I nearly tossed my cookies at the thought of it. bllech, bllech, bllech.
But lest you think I torture my child by only allowing her to eat veggies, or maybe you're thinking she's a health nut, trust me, she also loves all those other things that we wish they (and we) didn't. LOL Ice cream, candy, chips and cheetos, etc. etc. etc. But I'm not complaining. In my book, she earns them! LOL :-)

You are too funny! I did cook squash last week, but Liann did not like it! She loves eggs, but not tomatoes! So, I guess I will not have to worry about that recipe! I keep forgeting to watch Survivor China!

Yep, in China we were served tomatoes and eggs together. (didn't eat them however) No suggestions on how to cook them though. It was kinda like stewed tomatoes and scrambled eggs. :(

You are missing out if you have never scrambled eggs with salsa! Denny's also has dishes they call scrambles, and they put about anything in it. That's so cool she will eat all those veggies. I wonder if she would like squash the southern cooked way, breaded and fried! YUMMY! Squash and zuchini also can be scrambled with the eggs.

How about eggs and rice? Brinley and Bailey love scrambled eggs and I always save any leftover rice from dinner to add to it. They love it and will eat it until they are stuffed!
LOVE your new blog! I was so worried we wouldn't be seeing new photos of Mailia for a long time!

Hey Shirley. My grandma use to cook yellow squash with a little bit of water and LOTS of onions and put a top on it for awhile until the squash was soft. OH WOW is that good!!!! *ah memories*

Here's the recipe that comes closest to the taste that YuYu prefers (it's the sugar, try Malia out w/o the sugar first, then add the sugar just in case she likes it w/o, but YuYu wants the sugar)
and I cut down on the oil, but when our Chinese American friends make it for us, it's pretty greasy.

Ingredients:

3 tomatoes
1/2 tsp. scallion, shredded
2 eggs
1/2 tsp. fresh ginger, shredded
1 tsp. salt, or to taste
1 1/2 tsp. sugar
4 tbsp vegetable oil
1/4 tsp. MSG (optional)

Directions:

1. Drop the tomatoes in boiling water for 30 seconds. Remove, drain, and peel. Cut in half, squeeze out the seeds, and chop coarsely.

2. Beat the eggs with the 1/4 tsp. salt.

3. Heat 2 tbsp of the oil in a wok over high heat until the oil surface ripples . Pour in the eggs and cook, stirring constantly, until thickened. Remove from the wok and place in a dish. Add the other 2 tbsp of oil to the wok and reheat until very hot. Add the scallions and ginger and stir-fry for a few seconds. Then add the tomato, the remaining salt, sugar and MSG (optional) . Stir-fry about 30 seconds, then return the scrambled eggs to the wok . Stir to blend, remove, and serve.
